The pork chops are marinated in a honey Dijon soy blend, then grilled until perfectly caramelized and juicy. Paired with smoky grilled vegetables, sweet and salty baked sweet potatoes, and a fresh Italian salad, it’s a balanced, family-friendly meal that’s perfect for a warm evening outside.
Ingredients:
- 4–5 bone-in pork chops (1–1.25 inches thick)
- 1/4 cup olive oil
- 2 tbsp honey
- 3 tbsp soy sauce
- 1 tbsp Dijon mustard
- 3 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp apple cider vinegar or fresh lemon juice
- Optional: 1/2 tsp smoked paprika
Directions
- Whisk together olive oil, honey, soy sauce, Dijon, garlic, salt, pepper, and vinegar.
- Pat pork chops dry, then coat in marinade.
- Let marinate 30 minutes at room temp (or up to 2 hours refrigerated).
- Heat to medium-high (400–425°F).
- Remove pork from marinade, letting excess drip off
- Grill over direct heat, flipping every 2–3 minutes
- Cook about 8–10 minutes total, until internal temp reaches 140–145°F
- Let rest 5 minutes before serving.
- Optional: Reserve a little marinade before adding pork and brush on during the last minute for a glossy finish.

- 2 bunches broccolini
- 2 bell peppers, sliced (optional)
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt + pepper
Optional finish:
- Fresh lemon juice
- Shaved parmesan or crumbled feta
Directions
- Toss veggies with olive oil, garlic, salt, and pepper.
- Grill over medium heat for 8–10 minutes, turning occasionally.
- Cook until tender with light char.
- Finish with a squeeze of lemon and parmesan, if desired.

- Kosher salt
For serving:
- Butter
- Honey
- Cinnamon
- Flaky sea salt
Directions
- Preheat oven to 425°F.
- Scrub and dry potatoes. Rub with olive oil and sprinkle with salt.
- Bake 45–60 minutes, until fork tender and skins are slightly crisp.
- Slice open and gently press to fluff.
- Add butter, drizzle with honey, sprinkle cinnamon, and finish with flaky sea salt.
