If you’ve ever had the classic Master’s ice cream sandwich, you know the magic – two soft sugar cookies hugging creamy peach ice cream. Pure heaven! It’s one of my all-time favorite treats, and this little homemade version hits all the right notes.

The best part? It’s so easy to recreate at home with a bag of sugar cookie mix (trust me, skip the tube dough – this mix is way better). You just need an egg and some butter, and you’re on your way to the dreamiest cookie sandwich ever.

I made 6 big, bakery-style sandwiches with one bag of dough, but you could totally go mini for parties or kid-friendly sizes. Each cookie gets pressed down with a sugar-dipped Kerr jar for the perfect sparkle and crunch on top. Once they’re cooled, add a scoop of your favorite ice cream – peach if you’re channeling that Master’s vibe – and pop them in the freezer to set.

Whether you’re hosting friends or just treating yourself, these cookie sandwiches are a total crowd-pleaser. You’ve been warned… they disappear fast!

    Master’s Inspired Ice Cream Sandwiches

    Ingredients:

    • 1 bag sugar cookie mix (your favorite brand — better than the dough tube!)
    • 1 egg
    • 1 stick (½ cup) butter, softened
    • White sugar (for pressing cookies)
    • Your favorite ice cream (vanilla, cookies & cream, strawberry, etc.)
    • 1 can of diced peaches

    Directions:

    1. Preheat oven according to cookie mix instructions.
    2. In a bowl, combine sugar cookie mix, egg, and softened butter. Mix until dough forms.
    3. Divide dough into 12 equal-sized balls.
    4. Place on a lined baking sheet.
    5. Dip the bottom of a Kerr (or flat-bottom) jar in water, then in white sugar.
    6. Gently press down each dough ball to flatten and give it that sweet sparkle.
    7. Bake according to package instructions (usually 8–10 minutes) until edges are just golden.
    8. Let cool completely.
    9. Let ice cream soften on the counter for approx. 20 minutes.
    10. Add 1 can of peaches to ice cream.
    11. Spoon a generous amount onto 6 cookies, then top with the other 6 to make sandwiches.
    12. Use the back of your spoon to smooth out edges.
    13. Place sandwiches back in the freezer for at least 2 hours to firm up.
