This rich and hearty Italian Sausage Ragu tastes like it simmered on Nonna’s stove all day—but it’s ready in just 30 minutes. Made with bold flavors like garlic, tomato paste, and a hint of nutmeg, it’s the perfect weeknight comfort meal. Tossed with wide, silky ribbons of pappardelle and finished with fresh parsley and Parmesan, this dish delivers slow-cooked flavor without the wait.

    Crispy Air-Fried Chicken Chunks with Honey Mustard Sauce

    For the Chicken:

    • 1–1.5 lbs chicken tenders or boneless chicken breasts, cut into chunks

    • 1 cup flour

    • 2 eggs, whisked (or sub ¼ cup mayo or Greek yogurt)

    • 1 cup panko breadcrumbs (or regular breadcrumbs)

    • ¼ cup grated Parmesan cheese

    • 1 teaspoon garlic powder

    • 1 teaspoon paprika

    • ½ teaspoon salt

    • ½ teaspoon black pepper

    • Olive oil spray or drizzle

    For the Honey Mustard Sauce:

    • ½ cup mayonnaise

    • ¼ cup Dijon mustard

    • ¼ cup honey (plus more to taste)

    • 1 tablespoon white vinegar (or lemon juice or apple cider vinegar)

    • 1 tablespoon yellow mustard

    Directions:

    1. Preheat air fryer to 400°F for 3–5 minutes.
    2. Set up three shallow bowls: one with flour, one with whisked eggs, and one with a mixture of breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
    3. Coat each chicken piece in flour, then dip in egg, and finish in the seasoned breadcrumb mixture.
    4. Arrange chicken in a single layer in the air fryer basket. Work in batches if needed—don’t overcrowd!
    5. Lightly spray the tops with olive oil spray.
    6. Air fry at 400°F for 8–10 minutes, flipping halfway through, until golden brown and cooked through (internal temp of 165°F).
    7. While the chicken cooks, whisk together all honey mustard ingredients in a small bowl. Taste and adjust honey or vinegar to your liking.
    8. Serve the crispy chicken hot with the honey mustard sauce on the side.

    Oven-Roasted Sweet Potato Fries

    Ingredients:

    • 3 medium sweet potatoes

    • ⅓ cup avocado oil or olive oil

    • 1 tablespoon fresh thyme

    • 1 teaspoon sea salt

    • ½ teaspoon garlic powder

    • ½ teaspoon onion powder

    • ¼ teaspoon ground black pepper

    • ¼ teaspoon chili flakes

      Directions:

      1. Preheat oven to 450°F and line two baking sheets with parchment paper.
      2. Rinse and dry the sweet potatoes (no need to peel). Slice off the ends, then cut each potato in half lengthwise. Lay each half flat-side down and slice lengthwise into ¼-inch thick slabs. Stack a few slabs at a time and cut them lengthwise again into fry-shaped strips, about ¼ inch wide.
      3. Place the fries in a large mixing bowl and drizzle with the oil.
      4. In a small bowl, stir together the thyme, salt, garlic powder, onion powder, pepper, and chili flakes. Sprinkle the seasoning over the fries and toss until well coated.
      5. Spread the fries out in a single layer on the prepared baking sheets, ensuring they have space between them to crisp up (use both sheets if needed).
      6. Bake for 20 minutes, then flip the fries and bake for an additional 10–15 minutes, or until golden and crisp on the edges.

      Roasted Broccoli

      Ingredients:

      • 1 large head of fresh broccoli, cut into florets (about 4 cups)

      • 1–2 tablespoons olive oil

      • 2 cloves garlic, minced (or 1 tsp garlic powder)

      • Salt and black pepper, to taste

      • Juice of half a lemon (plus extra wedges for serving, if desired)

      • Optional: 1–2 teaspoons grated Parmesan for a finishing touch

      Directions:

      1. Preheat your oven to 450°F.
      2. Line a baking sheet with parchment paper. Spread broccoli in a single layer, and drizzle with olive oil. Season with garlic, salt, and pepper.
      3. Roast for 15–20 minutes, flipping halfway through, until the edges are golden and crispy.
      4. Squeeze fresh lemon juice over the broccoli right after roasting.
      5. Optional: Sprinkle with a bit of grated Parmesan before serving.
