IYKYK—1 of 4, and the only girl means I’m always walking in with something homemade (bonus points if it’s crowd-pleasing AND easy).
Now that I have the best sisters-in-law, I’m not the only one holding it down… but I still love bringing a good dip. 💁♀️
This creamy cheddar corn ranch dip is IT. Cheesy, creamy, just the right amount of kick, and no baking required. Serve it cold with @thegoodcrispycompany chips (trust me – you need that crunch). This one always disappears fast, so maybe double it. 😉
Creamy Cheddar Corn Ranch Dip
- 8 oz cream cheese, softened
- ½ cup cottage cheese or plain Greek yogurt
- 1 red bell pepper, finely diced
- 1 jalapeño, finely diced (leave seeds in for heat, or omit for mild)
- 1 small can corn, drained
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- Optional: squeeze of lime or chopped green onion for garnish
Directions:
- In a medium bowl, mix together cream cheese and cottage cheese or Greek yogurt until smooth.
- Stir in red pepper, jalapeño, corn, ranch seasoning, and cheddar.
- Mix until fully combined and creamy
