Topped with a rich dark chocolate layer and a sprinkle of mini chocolate chips, these bars are the perfect make-ahead snack or dessert to keep in the fridge or freezer for whenever a craving hits.

    Peanut Butter Bars

    Ingredients:

    • 1 cup natural creamy peanut butter

    • ⅓ cup maple syrup

    • 1 teaspoon vanilla extract

    • 1½ cups oat flour

    • ¼ teaspoon fine sea salt

    • ¼ cup mini dark chocolate chips

    For Topping:

    • ¾ cup dark chocolate chips

    • 1 tablespoon coconut oil

    • Flaky sea salt, for sprinkling (optional but recommended)

    Directions:

    1. Stir together peanut butter, maple syrup, and vanilla until smooth.
    2. Mix in oat flour and salt until a soft dough forms, then fold in mini chocolate chips.
    3. If dry, add a little milk; if soft, chill briefly.
    4. Press into a parchment-lined 8×8 pan.
    5. Melt dark chocolate chips and coconut oil in the microwave in short intervals, stirring until smooth.
    6. Pour over the base, spread evenly, and sprinkle with flaky sea salt.
    7. Freeze for 20–30 minutes until set.
