Halloween Chicken Pot Pie
-
1 frozen pie crust shell
-
1 sheet frozen pie crust (thawed and rolled out)
-
2 cups rotisserie chicken, shredded
-
½ package frozen peas & carrots
-
½ small onion, diced
-
1 celery stalk, diced
-
1 can cream of chicken (or cream of mushroom) soup
-
½ cup milk
-
1 cup shredded Gouda cheese
-
1 green onion, chopped
-
½ teaspoon onion powder
-
Salt and pepper, to taste
-
Egg wash: 1 egg beaten with 1 tablespoon of water or milk
Directions:
- Preheat oven to 375°F.
- In a skillet, sauté the diced onion and celery in a drizzle of olive oil or butter for about 3–4 minutes, until softened.
- In a large mixing bowl (or you can just use the skillet for less dishes) , combine sautéed onion and celery with chicken, peas & carrots, soup, milk, cheese, green onion, and seasonings. Stir until evenly mixed.
- Pour the mixture into the bottom pie crust shell.
- Roll out the thawed top crust and cut into festive Halloween shapes (like pumpkins, bats, or ghosts) or strips for a lattice design. Place on top of the pie.
- Brush with egg wash: In a small bowl, whisk together 1 egg with 1 tablespoon of water or milk. Lightly brush over the top crust using a pastry brush—this helps it turn golden and shiny as it bakes.
- Bake 35–40 minutes, or until the crust is golden brown and the filling is bubbly.
- Let cool 5–10 minutes before serving.
