As much as I love cooking, the week of a holiday used to feel extra stressful. The kids were home, the schedule was off, work was busy, and by dinnertime I was wiped. Some nights I had a plan… some nights I didn’t. And when I did pick a recipe, it was usually way too complicated for a week that was already chaotic.
But here’s what I’ve learned:
✨ Healthy doesn’t have to mean complicated.
✨ Simple doesn’t mean boring.
✨ And family-friendly doesn’t have to mean only nuggets and mac and cheese (even though I love both!).
During busy holiday weeks, simple ingredients, classic flavors, and letting everyone contribute to the menu has truly saved us. It keeps dinner predictable, easy, and actually enjoyable — even with kids running around and routines thrown out the window.
Here’s what we’re eating this week
