Peanut Butter Snow Balls
Ingredients:
- ½ cup creamy salted peanut butter
- ¾ cup almond flour
- 2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Pinch of salt (optional but recommended)
- 1 cup white melting chocolate
- 1 teaspoon coconut oil or neutral oil (optional, for smoother coating)
- Sprinkles, for topping
Directions:
- In a medium bowl, mix the peanut butter, almond flour, maple syrup, vanilla, and salt until smooth and cohesive.
- Scoop and roll the mixture into 1-tablespoon balls. Place on a parchment-lined tray and freeze for 20 minutes, until firm.
- Melt the white chocolate in the microwave in 30-second intervals at 50% power, stirring between each.
- Stir in coconut oil if using for a thinner, smoother coating.
- Drop each chilled ball into the melted chocolate. Use a spoon to coat completely, then lift out with a fork.
- Gently tap the fork to remove excess chocolate and place back on parchment.
- Immediately add sprinkles.
- Let the chocolate set at room temperature or refrigerate to speed things up.
- Store in an airtight container in the fridge for up to 1 week, or at room temperature for 1–2 days.
