Built with real ingredients and intentional protein, this Crispy Quinoa Tuna Crunch Bowl checks all the boxes: nourishing, satisfying, and easy to prep ahead. Bone-broth quinoa adds depth and crunch, the tuna salad brings a touch of sweet heat, and fresh toppings keep each bowl feeling light yet filling — perfect for grab-and-go lunches that support your energy all week long.
Crispy Quinoa Tuna Crunch Bowls
Ingredients (for 5 bowls)
- 1½ cups dry quinoa, rinsed
- 3 cups bone broth
- 3 tbsp chili crisp
- 1½ tbsp olive oil
- ¾ tsp kosher salt
- Black pepper, to taste
- 5 cans tuna (5 oz each), drained well
- ⅓ cup Greek yogurt
- 2½ tbsp mayo
- 2½ tbsp honey
- 2 tbsp sriracha (adjust to taste)
- 1 tbsp rice vinegar
- ½ cup green onions, thinly sliced
- ¼ cup very thinly sliced red onion
- ½ tsp kosher salt
Bowl Add-Ins (for the week)

- 2½ cups shelled edamame (thawed if frozen)
- 2 large English cucumbers, sliced
- 2–3 avocados, diced
- 5 soft-boiled eggs, halved
- Fresh cilantro, chopped
- Everything Bagel seasoning, for topping
Directions:
- Bring bone broth to a boil. Add quinoa, reduce to a simmer, cover, and cook 12–15 minutes until liquid is absorbed. Fluff and let steam off for 5–10 minutes.
- Preheat oven to 375°F.
- Spread quinoa on a parchment-lined sheet pan. Drizzle with chili crisp, olive oil, salt, and pepper. Toss to coat evenly, then spread into a thin layer.
- Bake 30–35 minutes, stirring every 10 minutes, until golden and crisp. Let cool completely — it crisps more as it cools.
- In a large bowl, whisk Greek yogurt, mayo, honey, sriracha, rice vinegar, salt, green onions, and red onion. Gently fold in tuna until combined but still flaky.
For each serving:
- ~1 cup crispy quinoa
- Generous scoop of tuna salad
- Add edamame, cucumber, avocado, and egg
- Finish with cilantro and Everything Bagel seasoning
Meal-prep tip: store quinoa separately and add just before eating to preserve crunch.
