This Teriyaki Chicken Pineapple Skillet is one of those meals that feels a little extra… without actually requiring extra effort. Juicy chicken, caramelized pineapple, and colorful peppers all cook together in one pan (or on the griddle) for the perfect balance of sweet and savory. Everything gets tossed in a glossy, homemade teriyaki sauce that’s simple to make – but if you’re short on time, a quality store-bought option works beautifully too. Serve it over cilantro lime rice for an easy, family-friendly dinner that tastes like takeout, only better.

Pineapple Chicken Teriyaki

Chicken

  • 1 ½–2 lbs chicken breast, cut into 1½-inch chunks
  • Salt + pepper

Veggies + Fruit:

  • 1 fresh pineapple, chunked
  • 1 red bell pepper, large squares
  • 1 orange bell pepper, large squares
  • 1 green bell pepper, large squares
  • 1 sweet onion, thick chunks

For Cooking:

  • 2–3 tablespoons oil
  • Teriyaki sauce (I love Primal Kitchen teriyaki when I’m short on time, but I also included my own recipe below!)

Grill Directions:

  1. Preheat griddle to medium-high heat.
  2. Add oil and spread evenly.
  3. Season chicken with salt + pepper.
  4. Add chicken, onion, all peppers, pineapple
  5. Let everything cook for 2–3 minutes undisturbed so the chicken can develop color.
  6. Then begin tossing and turning occasionally for about 6–8 minutes total, until chicken is cooked through, veggies are tender, pineapple is lightly caramelized
  7. Pour teriyaki sauce over everything.
  8. Toss and cook another 1–2 minutes until thickened and glossy.

Skillet Directions:

  1. Heat a large skillet (or cast iron) over medium-high heat.
  2. Add oil.
  3. Season chicken with salt + pepper.
  4. Add chicken, onion, all peppers, pineapple
  5. Let everything cook undisturbed for 2–3 minutes. (This is important – gives the chicken a chance to brown instead of steam.)
  6. Stir and toss occasionally for 7–9 minutes total, until chicken is cooked through, veggies are tender, pineapple is lightly caramelized (Don’t over-stir; let things sit at times to build color.)
  7. Pour in teriyaki sauce.
  8. Toss and cook another 1–2 minutes until thickened and glossy.

Ingredients:

    • ½ cup low sodium soy sauce
    • ¼ cup brown sugar (or coconut sugar)
    • 1 ½ teaspoons fresh ginger, minced
    • 1 teaspoon garlic, minced
    • 1 tablespoon honey
    • 1 teaspoon sesame oil
    • 2 tablespoons rice vinegar
    • ¼ cup water
    • 3 teaspoons cornstarch

    Directions:

    1. In a small saucepan, whisk together soy sauce, brown sugar (or coconut sugar), ginger, garlic, honey, sesame oil, rice vinegar
    2. In a small bowl, mix: ¼ cup water + 3 teaspoons cornstarch
    3. Pour into the saucepan and whisk well.
    4. Bring to a gentle boil over medium heat, then reduce heat slightly.
    5. Simmer for 3–4 minutes, stirring occasionally, until thickened.
    6. Remove from heat and let sit for a few minutes—it will thicken more as it cools.
    7. Makes about 1 to 1¼ cups
