There’s just something about mini meatloaves, mashed potatoes, and green beans that makes you feel like a kid again. This easy dinner is pure comfort food, with tender little meatloaves topped with a sweet and tangy glaze and all the classic sides you remember. It’s simple, cozy, and the kind of meal the whole family will be excited to see on the table.

Mini Meatloaves

Ingredients:

  • 1 1/2 lbs ground beef
  • 1/3–1/2 cup finely chopped onion
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 Tbsp fresh parsley, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 2 Tbsp Worcestershire sauce
  • 1 1/2 Tbsp ketchup
  • 3/4 tsp kosher salt
  • 3/4 tsp Italian seasoning
  • 1/2 tsp black pepper

For the Glaze:

  • 1/2 cup ketchup
  • 1 1/2 Tbsp brown sugar
  • 1 tsp white vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Directions:

  1. Preheat oven to 375°F. Lightly grease a mini muffin tin.
  2. Sauté the finely chopped onion in a small amount of olive oil over medium heat until softened, about 4–5 minutes. Let cool slightly.
  3. In a large bowl, combine the ground beef, onion, egg, garlic, parsley, panko, milk, Worcestershire sauce, ketchup, salt, Italian seasoning and black pepper. Mix gently until just combined.
  4. Divide the meat mixture among approximately 24 mini muffin cups, filling each generously and mounding the mixture slightly above the top.
  5. In a small bowl, stir together the ketchup, brown sugar, vinegar, garlic powder and onion powder.
  6. Spoon or brush the glaze generously over the top of each mini meatloaf.
  7. Bake for approximately 12–16 minutes, or until the centers reach 160°F.
  8. If desired, brush with a little additional glaze and broil for 1–2 minutes for a more caramelized finish.
  9. Let rest for a few minutes before removing from the muffin tin.
