One-Skillet Beef Bruschetta Spaghetti
Ingredients:
- 1½ lbs lean ground beef
- ¾ cup finely diced yellow onion
- 2 tablespoons tomato paste
- 4–5 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ¾ teaspoon kosher salt, plus more to taste
- ½ teaspoon freshly ground black pepper
- 1 cup low-sodium chicken broth
- 3 cups water, plus more as needed
- 12 oz spaghetti, broken in half
- 1 jar DeLallo Tomato Bruschetta
- ½ cup freshly grated Parmesan cheese, plus more for serving
- Fresh basil, for serving
- Optional: red pepper flakes
Directions:
- Heat a large, deep skillet over medium-high heat. Add the ground beef and diced onion. Cook for 6–8 minutes, breaking the beef into small crumbles, until browned and the onion is tender. Drain excess grease if needed.
- Add the tomato paste, Italian seasoning, salt, and black pepper. Cook for 1–2 minutes, stirring frequently, until the tomato paste darkens slightly.
- Add the minced garlic and cook for about 30 seconds, just until fragrant.
- Pour in the chicken broth and 3 cups water. Stir well, scraping up any browned bits from the bottom of the skillet. Bring to a boil.
- Add the spaghetti, breaking it in half so it fits easily into the skillet. As the noodles soften, use tongs to gently work them down into the liquid.
- Reduce the heat to maintain a steady simmer. Cook uncovered for about 10–12 minutes, stirring and tossing frequently so the noodles cook evenly and don’t stick together.
- If the liquid is absorbed before the spaghetti is al dente, add additional water ¼ cup at a time. When the pasta is finished, you want a small amount of starchy liquid remaining in the skillet rather than letting it cook completely dry.
- Reduce the heat to low. Add the entire jar of DeLallo Tomato Bruschetta and toss until evenly combined. Cook for another 1–2 minutes, just until the bruschetta is warmed through.
- Add the Parmesan and toss until melted. The Parmesan, starchy pasta liquid, and olive oil from the bruschetta should come together into a glossy sauce that coats the spaghetti. Add a splash of water if needed to loosen it.
- Taste and adjust the salt and pepper. Finish with plenty of freshly grated Parmesan, torn fresh basil, and red pepper flakes if desired.

No Jarred Bruschetta?
Instead of the jarred bruschetta, combine:
-
1 (14.5-oz) can petite diced tomatoes, well drained
-
2 tablespoons extra-virgin olive oil
-
1 small garlic clove, finely minced
-
2 tablespoons chopped fresh basil
-
Pinch of kosher salt
-
Freshly ground black pepper
Stir together and add it to the skillet at the same point you would add the jarred bruschetta.

Teresa Tip:
Don’t let all of the cooking liquid disappear before adding the bruschetta and Parmesan. A little starchy liquid left in the skillet helps everything come together into a silky sauce rather than a dry pasta.
