This is one of those meals that checks every box—easy, nourishing, and seriously satisfying. Tender crockpot BBQ chicken paired with crispy roasted potatoes, a creamy tangy slaw, and all your favorite fresh toppings creates the kind of bowl everyone in the family can get excited about. It’s customizable, packed with protein, and full of texture in every bite. Whether you’re feeding a busy weeknight crew or prepping lunches ahead, this one delivers big flavor with minimal effort.

    Ingredients:

    • 1.5–2 lbs chicken breast
    • 1 cup BBQ sauce
    • 1/4 cup chicken broth
    • 1–2 tsp Worcestershire sauce
    • 1 tsp garlic powder
    • 1 tsp smoked paprika
    • 1/2 tsp onion powder
    • 1 tsp salt
    • 1/2 tsp pepper
    • 1–2 tbsp apple cider vinegar

    Directions

    1. Add chicken, BBQ sauce, broth, Worcestershire, spices, and apple cider vinegar to crockpot
    2. Cook on LOW 4–5 hours or HIGH 2.5–3 hours

    To finish/shred…

    Option 1 (classic):

    • Shred directly in the crockpot with two forks

    Option 2 (quick method):

    • Transfer chicken to a stand mixer (like a KitchenAid stand mixer)
    • Use paddle attachment on low for 15–20 seconds until shredded

    After you shred…

    1. Return chicken to crockpot and toss in sauce
    2. Stir in an additional ½–1 tsp Worcestershire (optional but recommended)
    3. Let sit in sauce 10–15 minutes to soak up flavor

    Ingredients:

    • 3 large russet potatoes, diced small

    • 2 tbsp olive oil

    • 1 tsp salt

    • 1/2 tsp pepper

    • 1/2 tsp garlic powder

    • 1/2 tsp paprika (for color + subtle warmth)

    Directions

    1. Preheat oven to 425°F (place sheet pan in oven while preheating)
    2. Toss potatoes with olive oil + all seasonings (including paprika)
    3. Carefully spread onto hot pan in a single layer
    4. Roast 25–30 minutes, flipping once halfway, until golden and crispy
    5. Finish with a pinch of flaky salt

    Ingredients:

    • 1 (14–16 oz) bag coleslaw mix

    • 1/3 cup plain Greek yogurt

    • 1 tbsp apple cider vinegar

    • 1–2 tsp honey

    • 1/2 tsp salt

    • 1/4 tsp pepper

    Directions

    1. Mix Greek yogurt, vinegar, honey, salt, and pepper
    2. Toss with coleslaw mix
    3. Let sit 10–15 minutes for best flavor

    Ingredients:

    • 1/2 cup plain Greek yogurt

    • 2–3 tbsp BBQ sauce

    • Squeeze of lime

    • Pinch salt

    • Splash of water (to thin, if needed)

    Directions

    • Stir together all drizzle ingredients until smooth and pourable

    What You’ll Need

    • Cooked BBQ chicken
    • Crispy paprika potatoes
    • Prepared slaw
    • BBQ yogurt drizzle
    • Cherry tomatoes, halved
    • Avocado, sliced
    • Chopped pickles (dill or bread & butter)
    • Finely diced red onion (optional)
    • Fresh parsley or cilantro
    • Lime wedges

    Steps

    1. Start with the base
      Divide the crispy potatoes evenly between bowls.
    2. Add the protein
      Top with a generous scoop of BBQ chicken.
    3. Layer in freshness
      Add a scoop of slaw to each bowl.
    4. Add toppings
      Sprinkle on cherry tomatoes, avocado, pickles, and red onion (if using).
    5. Drizzle the sauce
      Spoon or drizzle the BBQ yogurt sauce over the top.
    6. Finish + serve
      Garnish with fresh herbs and a squeeze of lime. Serve immediately and enjoy!
