Chicken Bruschetta Pasta
Ingredients:
- 12 oz spaghetti
- 1½–2 lbs boneless, skinless chicken breasts, preferably thin-cut or pounded to an even thickness
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- ¾ tsp kosher salt
- ½ tsp black pepper
- 1–2 Tbsp olive oil
- 4 Tbsp butter
- 3 cloves garlic, minced
- 1½ jars DeLallo Tomato Bruschetta, divided
- ¾ cup freshly grated Parmesan cheese
- ½–¾ cup reserved pasta water, plus more as needed
- 1 cup shredded mozzarella cheese
- Fresh basil, for serving
- Additional Parmesan, for serving
Directions:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package directions. Before draining, reserve at least 1 cup of the pasta water. Drain and set aside.
- While the pasta cooks, season both sides of the chicken with Italian seasoning, garlic powder, salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for approximately 4–5 minutes per side, depending on thickness, until golden brown and the internal temperature reaches 165°F. Transfer the chicken to a plate.
- Reduce the heat to medium-low. Add the butter to the same skillet, scraping up all those flavorful browned bits from the chicken. Once melted, add the garlic and cook for about 30 seconds, until fragrant.
- Add 1 jar DeLallo Tomato Bruschetta to the skillet and cook for 1–2 minutes, just until warmed through.
- Add the drained spaghetti and ½ cup reserved pasta water to the skillet. Toss until well coated. Gradually add the Parmesan, tossing continuously until the butter, Parmesan and pasta water create a glossy sauce. Add additional pasta water a little at a time as needed.
- If needed for space, transfer the spaghetti to a larger oven-safe skillet. Arrange the cooked chicken breasts over the spaghetti.
- Spoon the remaining ½ jar of DeLallo Bruschetta generously over the chicken. Sprinkle the mozzarella primarily over the chicken, allowing a little to fall onto the spaghetti.
- Place under the broiler for about 2–3 minutes, watching closely, until the mozzarella is melted and beginning to turn golden.
- Top with fresh basil and additional Parmesan and serve warm.
