They’re crispy, cheesy, and packed with all the good stuff – ready in under 20 minutes and guaranteed to be a hit with the whole family (even the picky eaters!).
This is one of those throw-together meals that feels like a win every single time. Using a store-bought rotisserie chicken is the ultimate shortcut, and with just a few pantry staples, dinner practically makes itself. Perfect for Taco Tuesday – or let’s be honest, any night you need something easy and crowd-pleasing.
Chicken & Bean Tostadas
Ingredients:
- Rotisserie chicken (shredded)
- Refried beans (canned or homemade)
- Tostada shells
- Shredded cheese (cheddar, Monterey jack, or a blend)
- Fresh pico de gallo or salsa
Optional Toppings (if you have them on hand):
- Shredded lettuce
- Sour cream/greek yogurt
- Avocado slices
- Jalapeños
- Chopped cilantro
- Squeeze of lime
Directions:
- Preheat oven to 375°F.
- Spread a layer of refried beans onto each tostada shell.
- Top with shredded rotisserie chicken and sprinkle with cheese.
