Easter is here!
I love this holiday for so many reasons – it represents new life, there is so much color popping up, and there is just this feeling of joy all around!
Easter day has always been spent enjoying a wonderful meal together, taking the day slow, and being outside enjoying the sunshine (depending on our Oklahoma weather!) Food is such a huge part of the holidays to me- it always brings up memories of my childhood, and what my mom made for us. I think about that so often when I am cooking as a mom- the memories my kids will have of these experiences! It makes it that much more special!
This is our Easter lunch menu – a delicious traditional ham, fresh veggies, a sweet treat, cheesy potatoes, and so much wonderful food to go around! We are hosting this year, and I can’t wait to have our family in our home!

If you are hosting – don’t be afraid to ask for help! I always like having others bring appetizers so I know those will be ready, and I can focus on the main meal. If you are going to someone’s home, don’t show up empty handed! Even if they say they don’t need anything, bring a coffee, or a dessert! The thought goes a long way!
I’ve included my cooking timeline to help you have a smooth and enjoyable Easter lunch! Spending a little time Saturday prepping ahead will make such a difference for Sunday.

Day before:
- Peel and slice potatoes – store in the fridge covered
- Mix together salad dressing
- Boil eggs (we use the eggs the kids dye)
- Calculate time for ham to cook (depends on the size of your ham)
- Make Lemon Bars
- Make rolls
Day of (lunch time of 1 pm)
- Start ham (will vary depending on size of your ham) – I have two ovens which allows for different temperatures while cooking. If you don’t – you can also use a crockpot for your ham to free up oven space. It will take longer to heat through.
- 11:00 – Start potato recipe – want to have in the oven by 11:30
- 11:15 – Make deviled eggs – great job for the kids to help with and these are a great appetizer
- 11:30 – Mix carrots together, mix green beans together (do not cook yet)
- 12:00 – Mix salad together (do not put dressing on yet)
- 12:20 – Put green beans and carrots in the oven & check on potatoes (should be close to done)
- 12:30 – Pull potatoes out of oven if finished, keep covered until read to serve
- 12:40 – Slice ham
- 12:50 – Pull green beans and carrots out of oven
- 12:55 – Dress salad
- 1:00 – Time to eat! Enjoy!!
