Candy Cane Lane Snack Mix
Ingredients:
- 7 cups unsalted popped popcorn
- 2 cups mini pretzel twists
- 2 cups shelled salted pistachios
- 1 1/4 pounds of vanilla candy coating, coarsely chopped
- 1/2 cup finely chopped red peppermint candy canes
- 1 cup white chocolate peppermint baking chips
- 1 (5.8 oz) container of candy cane sprinkles
Directions:
- Grease a large bowl with cooking spray, line 2 jelly roll pans with parchment paper. Remove the unpopped kernels from the popcorn.
- Combine the popcorn, pretzels, and pistachios in the prepared bowl.
- Place the candy coating in a medium sauce pan, cook over low for 3 to 5 minutes or until the coating melts, stirring occasionally. Stir in the crushed peppermint candy.
- Pour the candy mixer over the popcorn mixture, toss to coat using 2 spatulas coated with cooking spray.
- Divide mixture between the two jelly roll pans, sprinkle the white chocolate peppermint baking chips, pressing gently to adhere.
- Top with candy cane sprinkles and let stand for 20 minutes or until firm.
- Break into pieces and store in an airtight container in a cool place.
