If you’re anything like me, weeknights can feel like a race against the clock – especially when dinnertime rolls around. That’s why I’m always on the lookout for quick, satisfying meals that don’t skimp on flavor. Enter: these 5-Ingredient Rotisserie Chicken Tostadas. They’re crispy, cheesy, and packed with all the good stuff – ready in under 20 minutes and guaranteed to be a hit with the whole family (even the picky eaters!).

This is one of those throw-together meals that feels like a win every single time. Using a store-bought rotisserie chicken is the ultimate shortcut, and with just a few pantry staples, dinner practically makes itself. Perfect for Taco Tuesday – or let’s be honest, any night you need something easy and crowd-pleasing.

Chicken & Bean Tostadas

Ingredients:

  • Rotisserie chicken (shredded)
  • Refried beans (canned or homemade)
  • Tostada shells
  • Shredded cheese (cheddar, Monterey jack, or a blend)
  • Fresh pico de gallo or salsa

Optional Toppings (if you have them on hand):

  • Shredded lettuce
  • Sour cream/greek yogurt
  • Avocado slices
  • Jalapeños
  • Chopped cilantro
  • Squeeze of lime

Directions:

  1. Preheat oven to 375°F.
  2. Spread a layer of refried beans onto each tostada shell.
  3. Top with shredded rotisserie chicken and sprinkle with cheese.
  4. Bake on a sheet pan for about 5-7 minutes, or until the cheese is melted and everything is warmed through.
  5. Finish with a generous spoonful of pico de gallo or salsa.
