These Sweet & Savory Korean Beef Noodle Bowls are the perfect balance of comfort and flavor – garlicky ground beef, colorful veggies, and saucy noodles all tossed in a naturally sweetened sesame-soy glaze. It’s everything you love about a stir-fry and a noodle bowl in one easy, 25-minute meal. Perfect for busy weeknights, picky eaters, or anyone who just wants a really good bowl of noodles.
Sweet & Savory Korean Beef Noodle Bowls
Ingredients:
- 8 oz noodles (ramen, rice noodles, udon, or spaghetti)
- 1 tablespoon avocado or olive oil
- 1 pound lean ground beef
- 1 red bell pepper, thinly sliced
- 1½ cups shredded carrots
- 1½ cups shredded cabbage or slaw mix
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
For Sauce:
- 1/4 cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons coconut sugar or honey
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce (optional)
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon cornstarch
- 1 tablespoon water
To Serve:
- Sliced green onions
- Sesame seeds
- Lime wedges (optional)
Directions:
- Bring a medium pot of water to a boil for the noodles.
- While the water heats, heat oil in a large skillet over medium-high. Add ground beef and cook for 5–6 minutes, breaking it up until browned. Drain any excess grease.
- Stir in garlic and ginger; cook 1 minute. Add bell pepper, carrots, and cabbage. Sauté 3–4 minutes until crisp-tender.
- Once boiling, cook noodles per package directions. Drain and set aside.
- In a small bowl, whisk together soy sauce, sesame oil, coconut sugar or honey, rice vinegar, hoisin, red pepper flakes, cornstarch, and water.
- Pour the sauce over the beef and veggie mix. Stir and simmer 1–2 minutes until slightly thickened. Add noodles and toss to coat.
- Garnish with green onions, sesame seeds, and a squeeze of lime.
