Tender, juicy beef gets piled high on soft slider buns, smothered in creamy cheddar sauce, and baked to golden perfection. Whether you’re hosting a backyard tailgate, heading to a potluck, or just feeding a hungry crew at home, these sliders deliver the flavor and fun that make every gathering feel like a win.
Cheddar Pot Roast Sliders
For the Roast
- 3–4 lb chuck roast
- 2 tbsp olive oil or avocado oil (for searing)
- 4 cloves garlic, minced
- ½ cup beef broth (low sodium)
- 1 tsp Worcestershire sauce
- Salt + pepper, to taste
For the Cheddar Sauce
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup whole milk (warm)
- 1 cup sharp cheddar cheese, shredded
- Salt + pepper, to taste
For the Sliders
- 12 slider buns or Hawaiian rolls
- Melted butter for brushing (optional)
- Sesame seeds or everything bagel seasoning (optional)
- Optional toppings: caramelized onions, pickled or fresh jalapeños, sautéed mushrooms, or sliced pepperoncini
Directions:
- Preheat oven to 300°F.
- Pat chuck roast dry, season with salt and pepper. Heat oil in a large Dutch oven over medium-high heat. Sear roast 3–4 minutes per side until nicely browned.
- Lift the roast slightly and scatter minced garlic underneath. Pour beef broth and Worcestershire sauce around the roast.
- Cover with a tight-fitting lid and bake for 3–4 hours, until beef is fork tender.
- Shred beef directly in the pot juices with two forks to keep it moist.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook 1–2 minutes until golden.
- Slowly whisk in warm milk, stirring constantly until smooth and thickened (about 3–5 minutes).
- Stir in cheddar cheese until melted. Season with salt and pepper to taste.
- Slice slider buns in half and place bottoms on a sheet pan. Layer with shredded pot roast, spoon cheddar sauce generously over the top, and add any optional toppings. Place bun tops on.
- Brush with melted butter and sprinkle sesame seeds if desired.
- Cover loosely with foil and bake at 350°F for 10–12 minutes until warmed through and buns are golden.
