Meal prep has truly been a lifesaver in our home. I actually started prepping food when Warren was about 6 months old and I was DROWNING trying to balance a 40+ hour career in medicine, motherhood, and taking care of our family. At first it felt so daunting – I thought every single meal had to be prepped and planned out perfectly. But I quickly learned it doesn’t have to be that way.

Now, I just focus on a few intentional recipes that make the biggest difference. For me, mornings have always felt like the most chaotic — I was seeing patients at 7:30, so our days started early. Having breakfast prepped eliminated so much stress. Cutting up fresh fruits and veggies ahead of time also helps us all snack better, and honestly, presentation is everything to my kids. If it looks good and is stored with a little effort, they’re way more excited to eat it.

That’s what meal prep looks like for me: simple, manageable steps that make busy weeks smoother and healthier. Here’s what I prepped this week:

    Healthy Pumpkin Bread
    This one is such a fall favorite in our house. Warm, cozy, and full of flavor, it’s the perfect breakfast or snack to have ready in the fridge. I love cutting it into slices so the kids can grab it on busy mornings, and it pairs beautifully with a drizzle of nut butter or a dollop of yogurt.

      High-Protein Ranch
      We go through a lot of dips around here, so having a healthier option prepped is key. This high-protein ranch is creamy, tangy, and so versatile. My kids love it with veggies, but I also use it on wraps, grain bowls, and even as a salad dressing.

        Almond Joy Granola Bites
        These little bites are the perfect grab-and-go snack. They’ve got that classic chocolate-and-coconut flavor but in a wholesome, energizing package. They keep well in the fridge, making it easy to have something satisfying ready between meals.

          Copycat McGriddles
          This one might be the ultimate breakfast hack. I love recreating classics in a way that feels a little lighter and better for us. These copycat McGriddles are freezer-friendly, kid-approved, and make early mornings so much simpler.

            Mini Turkey Tacos
            Dinner doesn’t get much more fun than these mini turkey tacos. They’re quick to throw together, packed with flavor, and perfect for busy weeknights. I prepped the filling ahead so all I need to do is warm it up and set out toppings for everyone to build their own.

              Green Wellness Shots
              These little shots pack in so many nutrients and are a simple way to sneak more greens into our week. I like to prep a batch and keep them in the fridge so I can grab one in the mornings or between meals. They’re refreshing, energizing, and make me feel like I’m starting the day off right.
