There’s something about having a few things prepped and ready to go at the beginning of the school week that makes everything feel a little more manageable. But I’m not interested in spending my entire Sunday afternoon meal prepping, and I definitely don’t want to fill the fridge with things my kids are going to ignore by Wednesday. 😂
So lately, I’ve been focusing on simple, kid-friendly foods that I can make ahead, grab quickly, and know my kids will actually eat. Nothing complicated, nothing that requires hours in the kitchen, just a handful of easy recipes and snack ideas that make breakfasts, lunches, and after-school snacking a little easier.
These are five things I’ve been making lately that have been a hit with my kids: pizza puffs, easy snack packs, carrot cake muffins, monster cookie protein balls, and Italian grinder chicken salad. They’re great for prepping at the beginning of the week so you have something ready to grab when everyone is rushing out the door, packing lunches, or suddenly declaring that they’re starving. 😉
If you’re looking for realistic school-week prep that doesn’t take forever and doesn’t feel like another chore on your list, these are a great place to start!
Pizza Puffs
These pizza puffs are basically everything my kids love about pizza in an easy, grab-and-go bite! They’re simple to prep ahead, easy to pack in lunches, and make a great after-school snack. Plus, they’re one of those recipes that you can make once and have ready for several days.
Snack Packs
I love having a few different snack packs ready to grab because it takes the guesswork out of snack time. I’ll mix things up with veggie and hummus packs, fruit packs, and little cheese, pepperoni, and cracker combos. They’re easy to customize based on what your kids like and make packing lunches or grabbing an afternoon snack so much easier.
Carrot Cake Muffins
These carrot cake muffins are one of my favorite things to have on hand for a quick breakfast or snack. They feel like a treat thanks to all those cozy carrot cake flavors, but they’re easy enough to prep ahead and grab throughout the week. My kids happily eat them, which is always a win in my book!
Monster Cookie Protein Balls
These monster cookie protein balls are such an easy little snack to keep in the fridge for busy school days. They’re packed with those classic monster cookie flavors kids love, but they’re also a great option when you want something a little more filling than a typical packaged snack. They take just a few minutes to mix together, making them perfect for a quick Sunday prep.
Italian Grinder Chicken Salad
If you love the flavors of an Italian grinder sandwich, you’re going to love this chicken salad! It’s an easy make-ahead lunch that’s packed with Italian-inspired flavor and can be served in so many different ways. Put it in a wrap, on a sandwich, with crackers, or just eat it straight from the bowl, it’s an easy option to have ready for the school week.
I’m all about finding little ways to make the school week easier, and having a few things prepped and ready to grab has made such a difference for us. The best part is that none of these recipes require hours in the kitchen or a huge meal-prep session, they’re simple, realistic, and things my kids actually enjoy eating!
You definitely don’t need to make all five every week. Pick one or two that your family loves, spend a little time prepping them, and give yourself a head start on the busy days ahead. Because anything that makes school mornings, lunch packing, and snack time a little easier is a win in my book!
