    Some nights you just need a dinner that works – simple, satisfying, and on the table fast. This BBQ Mini Meatball Dinner is one of those easy wins: tender, saucy meatballs, caramelized sweet potatoes, and cheesy roasted broccoli all cooking at the same time in the oven. It’s packed with flavor, kid-friendly, and comes together in about 30 minutes without a lot of fuss.

    Perfect for busy weeknights when everyone’s hungry and you need something dependable (and delicious) to get dinner on the table.

    • 1½ lbs ground chicken (93% lean)
    • 1 egg
    • ½ cup panko
    • 2 tbsp milk
    • ¼ cup finely grated onion
    • 1 clove garlic, minced
    • 1 tsp smoked paprika
    • ½ tsp kosher salt
    • ¼ tsp black pepper
    • ½ tsp Worcestershire sauce
    • 1 tbsp olive oil

    For Glazing:

    • ¾–1 cup BBQ sauce
    • 1–2 tbsp water (to loosen)

    Instructions: 

    1. Preheat oven to 400°F. Line a sheet pan (use a rack if you have one for better browning).
    2. In a large bowl, combine all meatball ingredients. Mix gently until just combined.
    3. Roll into mini meatballs (about 1 tablespoon each). You should get 28–32.
    4. Bake 12–14 minutes, until internal temp reaches 160–165°F.
    5. Whisk BBQ sauce with water. Brush generously over meatballs.
    6. Return to oven for 3 minutes, then broil 60–90 seconds until glossy and caramelized. Watch closely.

    • 2 medium sweet potatoes, cut into ¾-inch cubes
    • 2–3 tbsp olive oil
    • ¾ tsp kosher salt
    • ½ tsp smoked paprika
    • ¼ tsp black pepper

    Instructions: 

    1. Preheat oven to 450°F.
    2. Place cubed sweet potatoes directly on a lined sheet pan.
    3. Drizzle with olive oil and seasonings. Toss directly on the pan and spread into a single layer.
    4. Roast 18–22 minutes, flipping at the 10–12 minute mark.
    5. Remove when edges are golden and crisp and centers are fork tender.
    6. Sprinkle with flaky salt if desired.

    Minute 0 – Preheat + Sweet Potatoes Start

    Preheat oven to 450°F.

    Line a sheet pan with parchment.

    Add cubed sweet potatoes (¾-inch cubes) directly to the pan.

    Drizzle:

    • 2–3 tbsp olive oil

    • ¾ tsp kosher salt

    • ½ tsp smoked paprika

    • ¼ tsp black pepper

    Toss directly on the pan and spread into a single layer.

    👉 Roast at 450°F for 10 minutes.

    Minute 1–10 — Make Mini Meatballs

    In one bowl combine:

    • 1½ lbs ground chicken

    • 1 egg

    • ½ cup panko

    • 2 tbsp milk

    • ¼ cup grated onion

    • 1 clove garlic

    • 1 tsp smoked paprika

    • ½ tsp salt

    • ¼ tsp pepper

    • ½ tsp Worcestershire

    • 1 tbsp olive oil

    Mix gently.

    Roll into mini meatballs (1 tablespoon each).
    Place on separate lined sheet pan (rack optional).

    Minute 10 — Lower Temp + Add Meatballs

    After sweet potatoes roast 10 minutes:

    • Reduce oven to 400°F

    • Flip sweet potatoes

    • Add meatballs to oven

    Minute 15 — Start Broccoli (Separate Pan)

    On a second sheet pan:

    Add pre-cut broccoli florets.

    Drizzle:

    • 1–2 tbsp olive oil

    • Salt + pepper

    Toss directly on pan and spread out evenly.

    Place broccoli in oven at 400°F.

    Minute 22–24 — Glaze Meatballs

    Whisk:

    • ¾–1 cup BBQ sauce

    • 1–2 tbsp water

    Brush generously over meatballs.

    Return to oven for 3 minutes.

    Minute 25 — Add Cheese to Broccoli

    When broccoli is tender with lightly charred edges:

    Sprinkle ½–¾ cup shredded sharp cheddar over top.

    Return to oven for 2–3 minutes until melted.

    (Do not broil — cheese browns too quickly.)

    Minute 26–27 — Broil Meatballs

    Turn oven to broil.

    Broil meatballs 60–90 seconds until glossy and slightly caramelized.

    Watch closely.

    Minute 28–30 — Finish + Plate

    • Sprinkle flaky salt on sweet potatoes.

    • Optional small drizzle of warm BBQ sauce over meatballs for shine.

    • Let broccoli sit 1–2 minutes so cheese sets slightly.

    Plate and serve.
