This is one of those dinners that feels special but is actually so simple to pull together. The pork chops are marinated in a honey Dijon soy blend, then grilled until perfectly caramelized and juicy. Paired with smoky grilled vegetables, sweet and salty baked sweet potatoes, and a fresh Italian salad, it’s a balanced, family-friendly meal that’s perfect for a warm evening outside.

    Ingredients:

    • 4–5 bone-in pork chops (1–1.25 inches thick)
    • 1/4 cup olive oil
    • 2 tbsp honey
    • 3 tbsp soy sauce
    • 1 tbsp Dijon mustard
    • 3 cloves garlic, minced
    • 1/2 tsp kosher salt
    • 1/2 tsp black pepper
    • 1 tsp apple cider vinegar or fresh lemon juice
    • Optional: 1/2 tsp smoked paprika

    Directions

    1. Whisk together olive oil, honey, soy sauce, Dijon, garlic, salt, pepper, and vinegar.
    2. Pat pork chops dry, then coat in marinade.
    3. Let marinate 30 minutes at room temp (or up to 2 hours refrigerated).
    4. Heat to medium-high (400–425°F).
    5. Remove pork from marinade, letting excess drip off
    6. Grill over direct heat, flipping every 2–3 minutes
    7. Cook about 8–10 minutes total, until internal temp reaches 140–145°F
    8. Let rest 5 minutes before serving.
    9. Optional: Reserve a little marinade before adding pork and brush on during the last minute for a glossy finish.

    Ingredients:

    • 2 bunches broccolini
    • 2 bell peppers, sliced (optional)
    • 1 large onion, sliced
    • 2 tbsp olive oil
    • 2 cloves garlic, minced
    • Salt + pepper

    Optional finish:

    • Fresh lemon juice
    • Shaved parmesan or crumbled feta

    Directions

    1. Toss veggies with olive oil, garlic, salt, and pepper.
    2. Grill over medium heat for 8–10 minutes, turning occasionally.
    3. Cook until tender with light char.
    4. Finish with a squeeze of lemon and parmesan, if desired.

    Ingredients:

    • 4–5 medium sweet potatoes
    • Olive oil
    • Kosher salt

    For serving:

    • Butter
    • Honey
    • Cinnamon
    • Flaky sea salt

    Directions

    1. Preheat oven to 425°F.
    2. Scrub and dry potatoes. Rub with olive oil and sprinkle with salt.
    3. Bake 45–60 minutes, until fork tender and skins are slightly crisp.
    4. Slice open and gently press to fluff.
    5. Add butter, drizzle with honey, sprinkle cinnamon, and finish with flaky sea salt.

    Teresa's Tips:

    • Slice pork slightly off the bone for easy serving

    • Plate with sweet potato split open and butter melting

    • Layer veggies alongside or slightly underneath the pork

    • Finish with a pinch of flaky salt over the entire plate
