Sheet Pan Chicken Sausage Primavera Tortellini
- 1½ lbs chicken sausage, sliced into rounds
- 2 medium zucchini, sliced into thick half moons
- 1 medium yellow squash, sliced into thick half moons
- 1 small red onion, sliced
- 1 pint cherry tomatoes
- 3 tbsp olive oil
- 1½ tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 20 oz refrigerated cheese tortellini
- ¼ cup reserved pasta water
- ½ cup freshly grated parmesan cheese
- 2 tbsp fresh basil, chopped
- Zest of 1 lemon
- Juice of ½ lemon
- Optional: pinch of red pepper flakes and a drizzle of hot honey
Directions:
- Preheat oven to 425°F and bring a large pot of salted water to a boil.
- Add sausage, zucchini, squash, onion, and tomatoes to a sheet pan.
- Drizzle with olive oil and season with Italian seasoning, garlic powder, salt, and pepper. Toss well.
- Roast for 16–18 minutes, stirring halfway through. Broil for 1–2 minutes at the end if desired.
- While the sheet pan cooks, boil tortellini according to package instructions. Reserve ¼ cup pasta water before draining.
- Add cooked tortellini, roasted sausage and vegetables, pasta water, parmesan, lemon zest, lemon juice, and basil to a large bowl or pot.
- Toss gently until combined and glossy.
- Top with extra parmesan, basil, red pepper flakes, or hot honey if desired and serve warm.

0:00–5:00 Prep + Preheat
Preheat oven to 425°F.
Bring a large pot of salted water to a boil for the tortellini.
Slice sausage and vegetables while the oven preheats.
5:00–8:00 Season the Sheet Pan
Add sausage, zucchini, squash, red onion, and cherry tomatoes to a large sheet pan.
Drizzle with olive oil and season with:

Italian seasoning
-
garlic powder
-
salt
-
pepper
Toss lightly, but keep some separation between the ingredients on the pan for better roasting.
8:00–25:00 Roast
Roast for 16–18 minutes, stirring once halfway through.
During the last few minutes, switch oven to broil for 1–2 minutes if desired for extra color on the sausage and tomatoes.
15:00–20:00 Cook Tortellini
While the sheet pan cooks, boil tortellini according to package instructions until just tender.
Before draining, reserve ¼ cup pasta water.
Drain and return tortellini to the pot.
25:00–30:00 Finish Everything Together
Add roasted sausage and vegetables to the tortellini.
Add:

reserved pasta water

parmesan
-
lemon zest
-
lemon juice
-
basil
Toss gently until glossy and combined.
Finish with extra parmesan, basil, red pepper flakes, or a light drizzle of hot honey if desired.
