Peach BBQ Ribbon Chicken Skewers
Ingredients:

2 pounds boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
½ cup BBQ sauce
-
¼ cup mayonnaise
-
1 teaspoon Worcestershire sauce
-
1 teaspoon smoked paprika
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon kosher salt
-
½ teaspoon black pepper
-
1 teaspoon apple cider vinegar (or fresh lemon juice)
Peach BBQ Glaze:
-
½ cup BBQ sauce
-
2 tablespoons peach preserves or peach jam
-
1 teaspoon apple cider vinegar (or fresh lemon juice)
For Serving:
-
Chopped fresh chives or parsley
-
Flaky sea salt
Directions:
- Place the chicken breasts in the freezer for 30–45 minutes, just until firm.
- Using a sharp knife, slice each breast lengthwise into thin ribbons, about ¼ inch thick.
- In a large bowl, whisk together: BBQ sauce, mayonnaise, olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, apple cider vinegar
- Add the chicken ribbons and toss until evenly coated.
- Cover and refrigerate for 30 minutes, or up to 4 hours.
- Thread each ribbon onto a skewer in an accordion or ribbon pattern, weaving the chicken back and forth until each skewer is full.
- Lightly shake off any excess marinade before grilling.
- In a small bowl, stir together: BBQ sauce, peach preserves, apple cider vinegar
- Warm for about 20 seconds in the microwave if needed to make it easier to brush on.
- Preheat the grill to medium-high heat (about 400°F).
- Grill the skewers for 4–5 minutes.
- Flip and cook another 2–3 minutes.
- Brush generously with the peach BBQ glaze, flip once more, brush the other side, and grill for 1–2 additional minutes, just until the glaze is sticky and lightly caramelized and the chicken reaches 165°F.
- Transfer to a platter and let rest for 5 minutes.
- Sprinkle with: chopped chives or parsley, a light pinch of flaky sea salt
