This Memphis BBQ Grazing Board brings all the game day favorites together – smoky grilled sausage, sharp cheeses, zesty pickled bites, and fiery seasoned crackers – all anchored with classic Southern BBQ sauces. It’s hearty, shareable, and guaranteed to be a crowd-pleaser from kickoff to the final whistle.
Memphis BBQ Grazing Board

2 smoked sausage kielbasa, sliced into ½-inch rounds and lightly seasoned before grilling

4 cups cubed cheeses (cheddar, Swiss, Colby Jack assortment)

1 jar kosher dill pickle spears
-
1 cup pepperoncini

1 jar pickled okra
-
1 jar pickled okra
-
Seasoned Saltine Crackers (see recipe below!!)

Rendezvous BBQ sauce

Gold BBQ sauce
Assembling the Board
Prepare the sausage – Slice kielbasa into ½-inch rounds, season lightly with BBQ rub or paprika/garlic powder, then grill until browned on each side.
Anchor the board – Arrange sausage in the center.
Cheeses – Cluster cubed cheeses around the sausage.
Pickled accents – Add pickle spears, pepperoncini, and pickled okra in ramekins or piles.
Crunch – Add seasoned saltines or Firecracker Crackers.
Sauces & dips – Serve BBQ sauces and mustard in small bowls or jars with spoons.
Finishing touches – Garnish with fresh parsley or sliced green onions.
Ingredients:

1 box Saltine crackers

1 cup canola or olive oil

2 Tbsp ranch dressing powder

2 Tbsp red pepper flakes

1 tsp ground cayenne pepper
Directions:
- Place the saltines in a gallon-size plastic bag.
- Stir together oil, ranch powder, red pepper flakes, and cayenne.
- Pour mixture over crackers, seal bag, and gently turn to coat evenly.
- Let sit for several hours, turning occasionally, until oil is absorbed.
- (Optional but recommended) Preheat oven to 250°F. Spread crackers on a baking sheet in a single layer and bake 15 minutes for a crisp finish.
