This savory breakfast bowl is proof that a satisfying, healthy breakfast doesn’t have to be complicated. Using leftover roasted potatoes or butternut squash as the base, it’s layered with garlicky spinach and tomatoes, creamy avocado, and perfectly cooked eggs. Finish it off with a sprinkle of feta and fresh herbs, and you’ve got a cozy, flavor-packed breakfast that comes together in minutes – perfect for slow mornings or quick weekday fuel.

    Savory Breakfast Bowl

    Ingredients:

    • 2 teaspoons olive oil
    • 1 small clove garlic, minced
    • 2 cups spinach
    • ½ cup halved cherry or grape tomatoes
    • ¼ avocado, sliced
    • ½ cup leftover roasted potatoes or roasted butternut squash
    • 2 eggs (fried, scrambled, or soft-boiled — your choice)
    • Sea salt and freshly ground black pepper, to taste
    • Feta or Cotija cheese, for topping
    • Fresh herbs such as parsley, chives, or basil, optional
    • Salsa or hot sauce, optional

    Directions:

    1. In a small skillet, heat olive oil over medium heat.
      Add minced garlic and cook for about 30 seconds, until fragrant.
    2. Add spinach and tomatoes; cook, stirring often, until softened, about 2 to 3 minutes.
    3. In a separate pan, cook 2 eggs to your preferred style — fried, scrambled, or soft-boiled.
    4. In a bowl, combine potatoes or butternut squash, sautéed spinach and tomatoes, avocado, and eggs.
    5. Season with salt and black pepper.
    6. Top with feta or Cotija cheese and fresh herbs, if desired.
    7. Add a drizzle of salsa or hot sauce before serving warm.
