This Asian Chicken Crunch Salad is the perfect combination of fresh, colorful, and satisfying. Packed with tender rotisserie chicken, crunchy cabbage, crisp lettuce, sweet mandarin oranges, protein-rich edamame, and plenty of texture from toasted almonds and crispy wonton strips, every bite is bursting with flavor. The homemade sesame ginger dressing ties everything together with the perfect balance of savory, sweet, and tangy notes.

Whether you’re serving it as a light dinner, meal-prep lunch, or crowd-pleasing side dish, this salad comes together quickly and is always a hit. It’s a great way to use rotisserie chicken for an easy meal that feels fresh, vibrant, and restaurant-worthy.

Asian Chicken Crunch Salad

Ingredients:

  • 1 large head iceberg lettuce, finely shredded
  • ½ (10–14 oz) bag coleslaw mix (green & purple cabbage with carrots)
  • 1 rotisserie chicken, shredded (about 4–5 cups)
  • 1 red bell pepper, thinly sliced
  • 1 cup shelled edamame, cooked and cooled
  • 1 (11 oz) can mandarin oranges, drained well
  • 5 green onions, thinly sliced
  • 1 jalapeño, thinly sliced (remove seeds for less heat)
  • ¼ cup toasted slivered almonds
  • 1 Tbsp toasted sesame seeds
  • 1 package wonton wrappers, cut into strips and fried until golden

For the Dressing:

  • ¾ cup La Tourangelle olive oil
  • 1/3 cup rice vinegar
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp honey
  • 2 Tbsp fresh grated ginger
  • 2 cloves garlic, minced
  • 1 shallot, finely minced
  • 1 tsp La Tourangelle toasted sesame oil
  • Freshly ground black pepper, to taste

Directions:

  1. In a small bowl or jar, whisk together the olive oil, rice vinegar, soy sauce, honey, ginger, garlic, shallot, sesame oil, and black pepper until well combined.
  2. In a large serving bowl, combine the shredded iceberg, coleslaw mix, rotisserie chicken, red bell pepper, edamame, mandarin oranges, green onions, jalapeño, almonds, and sesame seeds.
  3. Drizzle with the desired amount of dressing and toss until evenly coated.
  4. Top with the crispy wonton strips just before serving and enjoy!

This salad is perfect for easy lunches throughout the week.

Divide the lettuce, coleslaw mix, chicken, vegetables, edamame, and mandarin oranges among 6 meal-prep containers.

Pack the dressing and crispy wontons separately, then toss everything together just before eating to keep the salad crisp and fresh.

The prepped ingredients will keep well in the refrigerator for up to 4 days.
